One of the greatest foods known to man may be bacon. To make almost anything (exception = green peppers) taste better, just add bacon. The online world has picked up on the fact that bacon is delicious, and have embraced it. Here is an article title "Why the Internet Loves Bacon", that doesn't really give a straight answer other than talking about the obsession. My opinion, as already stated, is just that it's so tasty.
Basically because of the taste and there are a lot of pigs, but you're right that it doesn't really explain why it would be suddenly popular on the internet.
